If you just can't let go of this whole topknot thing, at least give a sleek bun a go. They're even easier than topknots - before you get out of the water, swim up with your hair back so you get it all slicked away off your face. Run your palms over it to get rid of any bumps, then twirl into a low bun and tie off with an elastic. If you have bobby pins on hand they'll make it an even neater style.
